Remove the tofu from the packages and drain the water. Place the bricks in a large colander or other perforated pan in the sink or over a bowl, cover with plastic wrap and weight them down well with a few cans (about a pound or so each) or other weights at least 2 hours. This will help drain any excess water from the tofu. After the tofu has drained, cut into 1-inch cubes and place in a large bowl.
