This salad is the bomb diggity bomb! Add some chicken to the side, or make extra of the quinoa and dressing if you have some hefty eaters. But the flavor of this salad is really phenomenal!

Ingredients
Salad
  • 1/2 Cup Quinoa – dry
  • 1 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1 tsp Pepper
  • 5 cups Kale chopped small
  • 1/4 cup Sunflower Seeds
  • 1/4 cup Golden Raisins
  • 1/4 cup Fresh Parmesan Cheese grated or shaved
Lemon Vinaigrette
  • 1/4 cup Olive Oil
  • 1/4 cup Lemon Juice Fresh Squeezed
  • 2 cloves Garlic minced
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Dried Oregano
  • 1 tsp Honey
Instructions
  1. Prepare the quinoa as instructed, but add a clove of garlic from the beginning

  2. While the quinoa cooks, prepare any chicken or other protein you might pair with this salad

Lemon Vinaigrette
  1. Whisk together all of the ingredients in a small bowl. Adjust salt to taste

  1. In a large bowl, toss together the kale, quinoa, sunflower seeds, raisins and dressing
